Class V
- it is used only in processing. They are tendons, consumptive fascias and lymph nodes.
It is also worth mentioning by the way, that in the case of veal, there are only three quality classes for boneless meat: class I - lean meat and without tendons, class II - chude, but sinewy, class III - bloody meat, tendons and lymph nodes. For the formalities, we will add, that veal is obtained from animals aged from 2 weeks to 6 months.
