Pork class IV
Small meats obtained from pork half-carcass and basic elements during technological processing and trimming. Bloody meat, tendons with lymph nodes, lean or oily, fat to 36%. Pink to dark red color of the muscles, white fat, pink or cream shade allowed, pale pink to dark red in the case of meat and frozen fat, the oxidation layer is allowed; the color of the fat is white, pink or cream shade with a slightly gray shade is acceptable.
