Class I
- lean meat, devoid of tendons, with a distinctive red color. It is the healthiest meat - due to the small amount of fat. In addition, it is very delicate in taste and easy to process (because it is devoid of tendons). Thanks to this, it does not require a long preparation time. On the contrary, excessive heat treatment should be avoided, because they are easily drained of water, and then it hardens.
