Gluten threads from wheat grains

From the protein contained in wheat grains – gluten, it was possible to obtain a fiber suitable for the production of clothes – informs “New Scientist”. Gluten threads were obtained by Narenda Reddy and Yiqi Yang from the University of Nebraska at Lincoln. The new fiber is as soft as wool or silk and is just as strong – for that 30 times cheaper. Because it is biodegradable, may find application, for example, in the production of surgical sutures.

Gluten is a sticky protein, thanks to which the flour is suitable for baking – gives the dough cohesion and allows it to grow under the influence of carbon dioxide released by yeast
