How to make blackberry preserves
To prepare blackberry preserves, rinse and clean blackberries should be placed in layers in a saucepan., by sprinkling them with sugar. Two liters of blackberries should be used for this as well 3 cups of sugar. Cover the dish with a cloth and leave it in a cool place until the next day, so that the fruit can release the juice. Then, Bring the blackberries in a saucepan to a boil and leave to cool. Pour the juice from the fruit, bring to the boil and pour the fruit with boiling water again. We repeat these steps three times.
Then we decant the fruit juice. Add the juice squeezed from one rather large lemon to the blackberries. Boil blackberry juice and pour over the fruit. After these activities, the blackberries should be glassy and the whole juice with a very thick syrup.
We boil everything together. Put the preserves still hot into jars. Cover the jars with alcohol-soaked parchment paper and close them tightly. Instead of burning with parchment, we can also close the jars and pasteurize them for approx 15 minutes. We can use the preserves prepared in this way for desserts, and as an addition to tea. They also taste great on their own.
